Tasty Tuesday: Tarragon Chicken Pitas

This is quick dish that is perfect for summer. There is no stove or oven required! This dish was inspired from a recipe from the book The Best Life by Bob Greene.

Tarragon Chicken Pitas

Makes 3 pitas

3 whole wheat pitas

1 12.5 oz can chicken breast

4 T plain yogurt

1 T mayo (try the mayo w/olive oil)

2 tsp dried tarragon

½ cup fresh mushrooms, chopped

1 large stalk celery, chopped

1/3 cup green onions, chopped

¼ cup chopped almonds

Salt and pepper to taste

3 large pieces of lettuce

Mix all ingredients in a bowl. Place chicken mixture on whole wheat pitas with a piece of lettuce. Enjoy!
