Tasty Tuesday Part II: Chicken Tacos

This a quick, healthy dish that your family will love. Enjoy!


Chicken Tacos

1 lb ground chicken breast (just grind in your chopper)

2 T olive oil

Squeeze of lime

Salt and pepper to taste

10 corn tortillas

1 cup shredded lettuce

Mango Salsa (see this post for recipe)

Taco Sauce (see recipe below)


Taco Sauce

½ cup plain yogurt

2 T mayo

1 T adobo sauce (found in the Mexican section of grocery store)

2 T lime juice

1 tsp garlic powder


Heat pan with oil. Add ground chicken and then add salt and pepper. Once cooked through add a squeeze of lime.


Mix the taco sauce ingredients together in a small bowl. Prepare the mango salsa.


Warm the tortillas. Then add the desired amount of chicken, taco sauce, lettuce, and mango salsa to the tortillas.
