Making a Giant Cupcake

When I was looking for idea's for my son's first birthday, I stumbled across the Wilton Giant Cupcake Pan and I knew right away that I had to have it. Cupcakes are such a fun food and a giant cupcake is ten times the fun!

You can buy this pan at Michael's (use your 40% off coupon) or online at Target, Amazon , or Wilton. The Wilton site also has different way to decorate your cupcake, such as making it a castle, cottage, and even an easter basket.
The pan takes about 1 1/2 cake mixes. I made two cake mixes and used 3/4 of the batter and then used the rest of the batter to make regular cupcakes. Since the bottom half of the cupcake is thicker than the top, I put the batter in the bottom of the cupcake for 10 minutes and then took out of the oven and added the batter to the top half of the cupcake. This way the top half didn't dry out (not that it really mattered, since my son really just attacked it). Cook for a total time of about 50 minutes.

When decorating, decorate the bottom half before placing the top half of the cupcake on top. Frost the top and add sprinkles (Necco Waffers look cute on this because they look like giant sprinkles).

This is cake pan you can use over and over for all holidays really or just for a get together with family and friends.

Okay, thanks to the readers who have sent me pictures of creative cakes you've made. I'd love to post more in next Tuesday's post, so please send me pictures of the cake(s) you've made. There is a prize giveaway to those who send me pictures. Email them to celebratingtodayblog@gmail.com.

  2. Hi Erika, I need to take more time to check out your blog. It is such an uplifting site to visit and you have so many great ideas!! You are so talented and I am so impressed with you!

You might be interested to know that I have been watching "Gilmore Girls." I had never since it until just a couple of months ago. Megan borrowed the DVD's from a friend and we started watching them together. I remember you mom told me once that you really liked the show. When I found that out I thought I would check it out. I hardly watch any T.V., but I have to say, I really like this show. Megan and I have had a blast watching together.

You did a great job on your dad's invitation too!! I hope to see you soon :)!
