Tasty Tuesday: Chicken & Pineapple Kabobs

It already feels like summer here, so we’ve been grilling this past week. One of my favorite dishes to make on the grill is kabobs. Below is my favorite combination, but of course there are so many fun options with kabobs. These are delicious and they are extremely healthy!


Chicken & Pineapple Kabobs

2 large chicken breasts

1 fresh pineapple

1 red pepper

1 yellow pepper

1 small red onion

Salt

Pepper

Garlic powder

Teriyaki sauce


Cut the chicken, pineapple, peppers into large chunks. Place like items on the skewer so they will cook evenly. I have found the onions and peppers cook faster than the chicken so if you place all on one skewer the onions and peppers burn before chicken is finished cooking. If using wood skewers, soak in water for at least five minutes before using. Season chicken with salt, pepper, and garlic powder to taste.

Cook chicken on the grill for about 15 minutes rotating occasionally. Place pineapple, peppers, and onions on the grill for about 10 minutes also rotating occasionally. Coat chicken with a little Teriyaki sauce the last 2 minutes of grilling. Pull chicken, pineapple, and veggies off the skewers and mix in large bowl. If you want a little heat, add some Rooster sauce. Serve with brown rice.

  1. Too bad Tasty Tuesday doesn't come with a personal shopper to go to the grocery store for you. That looks yummy and I don't have a single ingredient for it in the house...yes we are even out of chicken.

  3. Okay, those look so yummy. I have to tell you at this restaurant that we went to on our get-a-way, we had grilled romaine lettuce with our other veggies---it was so tasty (I couldn't believe it).
