Tasty Tuesday: Greek Salad & Souvlaki

I seem to go in cooking phases. Two summers ago I went through an Italian phase and was constantly making pasta dishes. Last summer I was into Hispanic food. This year it has been Greek. I absolutely love the fresh, bold flavors of Greek Food. This is a delicious, healthful dish that I love.

Greek Salad
4 tomatoes, seeded and diced
1 cucumber, peeled, seeded and diced
½ green pepper, diced
¼ cup pitted kalamata olives, halved (tip: cheapest place to buy is Trader Joes)
¼ cup red onion, diced
1/3 cup feta cheese, crumbled
2 T fresh Italian parsley, chopped
3 T olive oil
1 T red wine vinegar
1 t oregano
Salt and pepper
Mix first seven ingredients together in medium sized bowl. In a small bowl mix oil, vinegar, and seasonings. Add dressing before serving.


Chicken Greek Souvlaki
1.5 lbs chicken breast, cubed
½ cup olive oil
¼ cup lemon juice
1 tsp oregano
1 tsp salt
1 tsp garlic powder
½ tsp pepper
Skewers

Mix oil, lemon juice, and spices in large plastic zip bag. Add the chicken to the marinade. Place in fridge overnight or for at least 4 hours.
Place chicken on skewers. Grill or broil about 6 minutes and then flip skewer and cook 6 more minutes.Complete this meal by warming or grilling some pita bread.
