I am not a huge casserole fan, I must admit. My mom made this growing up and it was my favorite casserole she made. As our family grows, I realize I may have to find more casserole recipes I like since they are a good way to stretch a dollar. This is an easy meal to throw together because it contains ingredients you usually have in your kitchen.
Crunchy Chicken Casserole
4 large carrots
2-3 medium potatoes (I prefer red)
1 cup cheddar cheese, grated
¼ cup flour
¼ cup butter
1 can chicken broth
Seasoned bread crumbs
Boil chicken. When chicken is about done cooking, peel and cut carrots and potatoes and boil or steam until tender. In a saucepan, melt butter over medium heat. Add flour and whisk until smooth. Add broth, stirring constantly until thickened. Remove from heat and add cheese; stir to melt. Cut chicken into bite size pieces. Add chicken and veggies to cheese sauce and stir to coat. Pour into a 9”x9” casserole dish. Top with seasoned bread crumbs. Bake at 375 for 30 minutes uncovered. Serves 3. This can always be doubled if feeding a larger family or group.
