My friend Rose is always so good about finding fun ways to introduce new vegetables to her daughter. She makes one dish that my son loves that I thought I would share with you.
This is my son's favorite lunch now and I love it that he is eating his vegetables! This is a dish that you can really throw whatever veggies you have in the fridge into it and make a tasty lunch for your kids.
In the Mexican food section of your grocery store, see if they sell fun shaped pasta such as ABCs or stars. The store I shop at has several varieties and the best part is they are only 25 cents per bag!
ABC Veggie Pasta
1 bag (7 oz) of ABC Pasta
1 can chicken broth
2-3 T olive oil
1/2 cup water
1/2 cup onion, chopped
1 T garlic, minced
1 stalk celery, chopped
1 zucchini, chopped
2 carrots, chopped
In large pot, saute vegetables in olive oil until tender. Add the chicken broth and water along with the pasta and let the mixture simmer until the pasta is tender. The pasta should absorb most of the moisture. It should be like a pasta dish not a soup.
